JERK CHICKEN
WITH SPICY
MANGO TOPPER
NATIONAL MANGO BOARD
INGREDIENTS
Serves 4
2 ripe mangos, peeled, pitted and cut into 1/4-inch dice
1/4 cup lime juice 2 tablespoons brown sugar
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon garlic powder
1/4 teaspoon cinnamon
1/4 teaspoon ground allspice
4 boneless, skinless chicken breasts, flattened slightly (about 1 1/2 pounds)
2 tablespoons Jamaican jerk seasoning blend
1 lime, halved
PREPARATION ttttttttttttt1. In a bowl, stir together the mango, lime juice, brown sugar, red pepper flakes, garlic powder, cinnamon and allspice.
2. Pat chicken dry. Season all sides with the jerk seasoning mixture and let stand 10 minutes.
3. Prepare a well-oiled grill for direct-heat cooking over medi- um-high heat (or preheat a broiler).
4. Grill the chicken for 5 to 7 minutes on each side or until the chicken is cooked through. Remove from the grill and squeeze the lime halves over each piece. Spoon the sea- soned mangoes over the chicken pieces.
