4. Preheat oven to 450°F. Lightly oil a large baking pan.
5. Put the chicken in the pan. Spread the rice over the chicken and cover with aluminum foil. Bake for 30 minutes. Lower the oven to 300°F and bake for 40 minutes.
6. Meanwhile, make the garnish. Heat the oil in a large skillet over medi- um-high heat. Add the onion and cook, sirring oten, unil browned and crisp, about 10 minutes. Drain on a paper-towel lined plate.
7. Uncover the biryani and scater the fried onion on top. Gently sir the onion into the biryani. Let the lavors mingle for 5 to 10 minutes before serving.
