AUNTIE’S PIZZAS
JEWERS FAMILY, BELLINGHAM, MA
INGREDIENTS
Serves 6
8 ounces Velveeta cheese, cut into chunks
8 ounces shredded cheddar cheese
1 bell pepper, stemmed, seeded and chopped
6 slices bacon, chopped 6 English muffins, sliced in half Paprika
“Great Aunt Louise made these for me and my cousins when we were kids. All the boys would have a contest to see who could eat the most. Now our boys enjoy them for an easy dinner or quick snack.” Michelle and Bill Jewers
ttttPREPARATION 1. Preheat broiler. Line a broiler pan with aluminum foil.
2. In a blender, combine the cheeses, bell pepper and bacon. Puree until well combined. Spread a generous amount of the cheese mixture on the cut sides of the English muffins. Sprinkle paprika on top.
3. Put the English muffins on the pre- pared pan and broil until the cheese is bubbling and the bacon is cooked, a few minutes.
