CHICKEN
FLORENTINE OVER
SPAGHETTI
LOBUE FAMILY, SCARSDALE, NY
INGREDIENTS
Serves 6
Vegetable oil
1 to 2 pounds boneless chicken, cut into 1 1/2-inch cubes
Salt Garlic salt Ground black pepper Dried basil Dried oregano Paprika 1 pound firm mozzarella, such as
Polly-O, cubed
1 (10-ounce) package frozen spinach
1 (16-ounce) can chicken broth
1 (28-ounce) can whole tomatoes or 1 package grape tomatoes, chopped
1 pound thin spaghetti Butter, for the spaghetti Grated Parmesan cheese, for garnish

As our family has changed, with three children in different schools with different schedules, Chicken Florentine has remained a constant. Our children have shared it with their friends. PREPARATION
1. Heat a thin film of olive oil in a large skillet over medium-high heat. Add the chicken and season with a few pinches of salt, garlic salt, pepper, basil, oregano and paprika to suit
your tastes. Cook the chicken over medium heat until the pieces are slightly browned on each side, 10 to 15 minutes.
2. Pour the broth over the chicken and bring to a simmer. Add the spinach to the center of the skillet and cover the skillet so the spinach defrosts. Occa- sionally remove the lid and prod the spinach with a fork to accelerate the process. Add the tomatoes and bring the sauce to a simmer.
3. In a pot of boiling, salted water, cook the spaghetti according to the instruc- tions on the package until al dente, about 8 minutes. While the spaghetti cooks, add the mozzarella to the tomato sauce.
4. Drain the spaghetti and return it to the pot. Dab a bit of butter over the spaghetti and stir to avoid the pasta from sticking together.
5. To serve, divide the spaghetti among the plates. Spoon the chicken tomato mixture over the spaghetti with some of the liquid from the skillet. Finish with a sprinkle of Parmesan cheese.
