Mark’s Kickin’ (Meat) Balls

“Everyone loves them . . . the anchovies give it a kick, and you’d never know they were ANCHOVIES.”

INGREDIENTS Serves 4 to 6
1 pound ground beef
1 tin of anchovies, puréed in a blender or food processor
1⁄2 pound ground sausage
1⁄2 cup bread crumbs
1 cup marinara sauce
2 large eggs, lightly beaten
Minced garlic cloves (as many as you can handle!)
Italian spices
Grated Parmesan cheese
PREPARATION
1. Preheat oven to 375°F.
2. In a large bowl, combine the ground beef, anchovies, sausage, bread crumbs, marinara sauce, eggs, garlic and a generous quantity of Italian spices. Mix gently but thoroughly until combined. Shape the meat mixture into balls and place on a baking sheet. Sprinkle with cheese.
3. Bake, turning occasion- ally, until the meatballs
are browned and cooked through, about 30 minutes.
