Circle Potatoes

“This potato side dish is easy to prepare and so yummy. The recipe came from my mom and we’ve been making it for years. It is often requested by our children.” Laura Rasmussen
INGREDIENTS Serves 4
3 large baking potatoes, cut into rounds about 3⁄8 inch thick
2 tablespoons olive oil
2 tablespoons unsalted butter, melted
1 garlic clove, minced 1⁄2 teaspoon salt
1⁄2 teaspoon ground black pepper
1⁄4 teaspoon dried thyme
PREPARATION
1. Preheat oven to 450°F. Spray a shallow baking dish with nonstick cooking spray.
2. Arrange the potatoes in a single layer in the prepared baking dish. In a small bowl, whisk together the oil, butter, garlic, salt, pepper and thyme. Drizzle over the potatoes and use a basting brush to spread the mixture evenly.
3. Bake until the potatoes are starting to brown, about 25 minutes.
