Pineapple Stuffing

INGREDIENTS Serves 6
3⁄4 cup granulated sugar
1⁄2 cup (8 tablespoons) unsalted butter or margarine
4 large eggs, lightly beaten
1⁄4 cup orange juice
1 teaspoon vanilla extract
1 (20-ounce) can crushed pineapple, drained
7 bread slices (your choice), cut into small pieces
1 teaspoon ground cinnamon
PREPARATION
1. Preheat oven to 350°F. Grease a 2-quart baking dish.
2. Put the sugar in a large bowl.
3. In a small saucepan over medium heat, melt the butter. Pour the butter over the sugar and stir to com- bine. Add the eggs, orange juice, vanilla and pineapple and stir to combine. Add the bread and stir until well blended.
4. Transfer the stuffing mixture to the prepared baking dish and sprinkle with the cinna- mon.
5. Bake until golden brown on top, 30 to 35 minutes. For best results, serve the stuff- ing directly from the oven.
