Black Bean Brownies

INGREDIENTS Serves 16
1 (15.5-ounce) can Bush’s Best Black Beans, rinsed and drained
3 large eggs
3 tablespoons vegetable oil
1⁄4 cup cocoa powder
Pinch salt
1 teaspoon vanilla extract
3⁄4 cup granulated sugar
1 teaspoon instant coffee (op- tional)
1⁄2 cup chopped walnuts or pecans (optional)
1⁄2 cup milk chocolate chips (optional)
PREPARATION
1. Preheat oven to 350°F. Lightly grease an 8x8-inch baking dish.
2. In a blender, combine the black beans, eggs, oil, cocoa powder, salt, vanilla, sugar and instant coffee, if using. Blend until smooth. Pour the mixture into the pre- pared baking dish. Sprinkle the walnuts and chocolate chips, if using, over the top of the batter.
3. Bake until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes. Transfer the pan to a wire rack and let cool completely before cutting into 16 squares.
