Baked Oatmeal

“This has been a breakfast favorite in our family for many years. It is breakfast comfort food and takes just a few minutes to prepare.” Terri Podorefsky
INGREDIENTS PREPARATION
Serves 6
1⁄2 cup vegetable oil
2 large eggs, beaten
1 cup granulated sugar
3 cups quick-cooking or old-fashioned rolled oats
2 teaspoons baking powder 1 teaspoon salt
1 cup milk, plus more for serving (optional)
Strawberry jam, for serving (optional)
1. Preheat oven to 350°F.
2. In a large bowl, stir together the oil, eggs and sugar until well blended. Add the oats, baking powder, salt and milk and stir until well combined.
3. Pour the oatmeal mixture into a medium baking dish. Bake until the oatmeal is set, 30 to 35 minutes.
4. Serve the oatmeal in
cereal bowls. Top each with
1 teaspoon strawberry jam and a small amount of milk, if desired.
