One-Bowl Chocolate Cake

INGREDIENTS Makes 1 layer cake
Cake:
2 cups granulated sugar
1 3⁄4 cups all-purpose flour
3⁄4 cup unsweetened cocoa powder
1 1⁄2 teaspoons baking powder 1 1⁄2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup milk
1⁄2 cup vegetable oil
2 teaspoons vanilla extract 1 cup boiling water
Frosting:
1⁄3 cup unsalted butter, softened 4 1⁄2 cups sifted confectioners’
sugar
1⁄4 cup milk or heavy cream, plus more if needed
1 1⁄2 teaspoons vanilla extract Food coloring (optional)
