Lori’s (Famous) Southwest Chicken

INGREDIENTS PREPARATION
Serves 4
1 (6.75-ounce) box Spanish rice pilaf
1 3⁄4 cups water
1 (14-ounce) can black beans, drained and rinsed
2 pounds boneless, skinless chicken breasts
1 (12-ounce) jar salsa (any variety)
Sour cream, for garnish (optional)
Green chile peppers, for garnish (optional)
1. Preheat oven to 350°F. Spray a glass or metal rect- angular baking dish with nonstick cooking spray or olive oil.
2. Spread the rice pilaf and the contents of its seasoning packet on the bottom of the prepared baking dish. Add the water and black beans. Place the chicken breasts on top of the rice and bean mixture. Spread the salsa over the top of the chicken.
3. Bake until the chicken is cooked through, about 35 minutes. Garnish with sour cream and green chile peppers, if desired.
