KeyLime Pie

INGREDIENTS
Serves 12
4 large eggs, separated
1 (14-ounce) can sweetened condensed milk 1 cup lime juice
6 tablespoons granulated sugar
1⁄2 teaspoon cream of tartar
One purchased graham cracker pie shell
PREPARATION
1. Preheat oven to 350°F.
2. In a bowl, mix together the egg yolks and sweetened condensed milk until combined. Stir in the lime juice.
3. In another bowl, whisk one of the egg whites until stiff peaks form. Fold into the lime juice mixture. Pour the filling into a 9-inch graham cracker pie shell.
4. Using the same bowl and whisk, beat the remaining 3 egg whites until soft peaks form. Gradually add the sugar and cream of tartar and continue beating until stiff peaks form.
5. Spread the meringue on top of the pie. Bake until the meringue is golden. Transfer to a wire rack to cool, then refrigerate until completely chilled before serving.
