Newcomb House Pancakes

“I have been making these pancakes since my children were babies. I have been told that my children’s friends want to stay overnight at our house because of my homemade pancakes in the morning—we always have a houseful! It is a favorite recipe of family and friends and has been shared many times.” JENNIFER NEWCOMB
INGREDIENTS
Serves 4
1 large egg
3⁄4 cup reduced-fat milk
2 tablespoons canola oil
1 cup all-purpose flour
2 tablespoons granulated sugar, plus additional, for sprinkling 2 teaspoons baking powder
1⁄2 teaspoon salt
Melted unsalted butter, for cooking
Mini chocolate chips
Ground cinnamon
PREPARATION
1. In a large bowl, whisk together the egg, milk and oil. Add the flour, sugar, baking powder and salt and whisk until combined. Let sit 5 minutes.
2. Preheat a griddle over medium heat until hot and brush with butter. Working in batches, drop the batter by the quarter cupful onto the griddle and sprinkle the top of each pancake with chocolate chips.
3. When the first side is golden brown, flip the pancakes over. Sprinkle lightly with cinnamon and sugar and cook until golden on the other side.
