“These are our go-to cookies. Whatever type of chocolate chips, dried fruits and nuts are on hand in the pantry end up in these cookies when we make them. There’s always a batch of frozen dough on hand to pull out when friends come over and we want to serve something sweet and delicious.”

INGREDIENTS
Makes 18 to 50 cookies, depending on size
1 cup (16 tablespoons) unsalted butter 1 cup granulated sugar
1⁄2 cup packed light brown sugar
1 teaspoon vanilla extract
2 large eggs
1 1⁄2 cups all-purpose flour
1 teaspoon baking soda
1⁄2 teaspoon salt
1 teaspoon ground cinnamon
3 cups old-fashioned rolled oats
1⁄2 cup semisweet chocolate chips, dark chocolate chips or butterscotch chips 1⁄2 cup shredded coconut (sweetened or unsweetened)
1⁄2 cup golden raisins or other dried fruit
1⁄2 cup Grape-Nuts cereal
1⁄2 cup pecans or your favorite nut, toasted and chopped
