Spiced Banana Bread

INGREDIENTS
Makes 1 loaf
1 1⁄2 cups all-purpose flour
1 1⁄2 teaspoons baking powder
1⁄2 teaspoon baking soda
1⁄4 teaspoon ground cinnamon
1⁄4 teaspoon ground cloves
1 large egg
4 medium-sized ripe bananas, mashed 2⁄3 cup packed light brown sugar
1⁄4 cup sunflower or canola oil
2 tablespoons orange juice
1 teaspoon grated lime peel
OPTIONAL
1⁄4 cup mini chocolate chips 1⁄4 cup raisins
1⁄4 cup Ocean Spray dried cranberries
PREPARATION
1. Preheat oven to 350°F. Grease the bottom and sides of an 8 1⁄2- by 4 1⁄2- by 2 1⁄2-inch loaf pan.
2. In a medium bowl, combine the flour, baking powder, baking soda, cinnamon and cloves. Make a well in the middle of dry mixture and set aside.
3. In another bowl, combine the egg, bananas, sugar, oil, orange juice and lime peel. Add the egg mixture to the dry mixture and stir together until well blended but lumpy. Fold in any combination of the optional ingredients.
4. Spoon the batter into the prepared pan. Bake until a butter knife inserted into the center of the loaf comes out clean, about 1 hour 15 minutes. Let cool in the pan 10 minutes, then invert the loaf onto a wire rack to cool completely.
