TurkeyMushroom Burger

INGREDIENTS
Makes 8 patties
1 pound all-natural extra-lean ground turkey
1 large organic, cage-free egg 1 tablespoon flax meal
2 teaspoons Dijon mustard
2 teaspoons tomato paste
3⁄4 teaspoon salt
PREPARATION
Ground black pepper, to taste
2 teaspoons extra-virgin olive oil
2 tablespoons chopped yellow onion
2 garlic cloves, chopped
2 cups sliced mushrooms
1 cup cooked lentils, rinsed and drained Canola oil, for grilling
1. In a large bowl, mix together the turkey, egg, flax meal, mustard, tomato paste, salt and pepper. Set aside.
2. Heat the olive oil in a small nonstick skillet over medium-high heat. Add the onion and garlic and sauté 1 to 2 minutes, then add the mushrooms and cook until softened, 5 to 8 minutes.
3. Place the mushrooms and lentils in a food processor and process until creamy. Stir the mushroom mixture into the turkey mixture and mix thoroughly. It will be sticky. You can refrigerate at this point until ready to grill, but do not form into patties.
4. Drizzle a little canola oil into a large nonstick grill pan and heat over high heat. When the pan is very hot, working in batches, spoon a heaping 1⁄3 cup turkey mixture per patty onto the grill pan. Do not attempt to shape the patties at this point. Let cook for 2 to 3 minutes, then flip the patties over and flatten gently with a large spatula. Cook 2 to 3 minutes more
on the second side. Turn the patties over again and continue cooking until cooked through. Repeat with the remaining turkey mixture.
