Crustless Spinach Quiche

INGREDIENTS
Serves 6
2 teaspoons canola oil
1 yellow onion, finely chopped
1 (10-ounce) package frozen chopped spinach, thawed and drained 1 1⁄2 cups grated reduced-fat cheddar cheese
6 large egg whites
1 large egg
1⁄3 cup fat-free cottage cheese
1⁄4 teaspoon cayenne pepper
1⁄8 teaspoon salt
1⁄8 teaspoon ground nutmeg
PREPARATION
1. Preheat oven to 375°F. Spray a 9-inch pie dish with nonstick cooking spray.
2. Heat the oil in a nonstick skillet over medium-high heat. Add the onion and sauté until translucent, about 5 minutes. Add the spinach and cook until dry, about 3 minutes. Set aside.
3. Sprinkle the cheese evenly on the bottom of the prepare pie dish. Top with the spinach mixture.
4. In a bowl, whisk together the egg whites, egg, cottage cheese, cayenne, salt and nutmeg. Pour the egg mixture over the spinach.
5. Bake until set, 30 to 40 minutes. Let cool 5 minutes. Cut into 6 wedges. Serve warm.
