Grilled Shrimp with Roasted Fennel Butter

INGREDIENTS
Serves 4
1 teaspoon ground fennel
1 cup (16 tablespoons) West Creek unsalted butter, softened 1 tablespoon minced shallot
1 teaspoon ground black pepper
1⁄2 teaspoon salt
1 pound (16-20 count) Bay Winds shrimp
PREPARATION
1. Prepare a grill for direct-heat cooking over medium-high heat, or place a baking sheet in an oven and preheat oven to 500°F.
2. In a small bowl, stir the butter, fennel, shallot, pepper and salt together until combined.
3. Arrange the shrimp on the grill or preheated baking sheet and cook until the shrimp are pink and opaque, 3 to 5 minutes. If grilling, cover the grill.
4. Top each shrimp with 1⁄2 teaspoon of the fennel butter and continue cooking until the butter is melted and hot.
