Chicken Soup with Tortellini

“This recipe is super easy to make. It’s perfect for a winter or rainy day. It’s something that I make for Andrew whenever he comes home. It’s a Semler family favorite.” ROBIN SEMLER
INGREDIENTS
Serves 4
4 to 5 boneless skinless chicken thighs 1 yellow onion, quartered
2 cups baby carrots
2 to 3 chicken bouillon cubes
1 sweet potato, cut into 1- to 2-inch pieces 1 package Lipton onion soup mix
1 (15-ounce) can tomato sauce
1 bag dry or frozen 3-cheese tortellini
PREPARATION
1. Fill a large pot with water and bring to a boil over high heat. Add the chicken, onion, carrots, bouillon cubes, sweet potato, soup mix and tomato sauce and return to a boil.
2. Lower the heat to medium and cook, uncovered, 1 1/2 to 2 hours. Add the tortellini and cook 15 minutes more.
3. Transfer the chicken thighs to a cutting board. Cut into small pieces and return to the soup.
