Sausage Tortellini Soup

INGREDIENTS
Serves 6 to 8
2 pounds bulk sweet Italian sausage 1 yellow onion, coarsely chopped
2 garlic cloves, chopped
2 (14.5-ounce) cans beef broth
1 cup water
1 (28-ounce) can diced tomatoes with juice 1 (28-ounce) can tomato sauce
3 to 4 carrots, sliced thinly
3 stalks celery, sliced
1 green bell pepper, seeded and chopped
2 tablespoons chopped parsley
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh oregano
1 bag frozen cheese tortellini
Grated Parmesan cheese (optional)
PREPARATION
1. In a large Dutch oven over medium-high heat, cook the sausage, onion and garlic until the sausage is browned and onion is tender.
Drain excess grease.
2. Add the broth, water, diced tomatoes, tomato sauce, carrots, celery, pepper, parsley, basil and oregano and bring to a boil. Reduce heat to low and simmer, uncovered, for 45 minutes.
4. Add the tortellini, raise the heat to medium and continue simmering until tortellini are fully cooked, about 15 minutes.
5. Sprinkle with Parmesan cheese, if desired, and serve.
