Macaroni and Cheese

INGREDIENTS
Serves 6
2 tablespoons unsalted butter
1 small yellow onion, chopped (about 1/4 cup)
2 tablespoons all-purpose flour
1⁄2 teaspoon salt
1⁄4 teaspoon ground black pepper
2 cups milk
10 ounces shredded cheddar cheese
2 1⁄2 cups elbow, ziti, or your choice of pasta, cooked until al dente
Thinly sliced tomatoes or bread crumbs (optional)
PREPARATION
1. Preheat oven to 375°F.
2. Heat the butter in large saucepan over medium heat until melted. Add the onion and cook about 3 minutes. Stir in the flour, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat.
3. Stir in the milk. Return the pan to medium-high heat and bring to a boil, stirring constantly. Continue boiling 1 minute more; remove from heat.
4. Stir in the cheese until melted. Add pasta and stir until evenly coated. Pour into an ungreased 1 1/2-quart baking dish. Top with a few slices of tomatoes or bread crumbs. Bake until bubbly and light brown,
about 30 minutes.
