Garlic Shrimp

“We love this as an appetizer for gatherings with family and friends. Or, add some pasta and a fresh tossed salad and it’s dinner. Either way, it’s always a hit!” — Joyce Mase
Preparation
1. In a glass bowl, combine the oil, parsley, garlic, red pepper flakes and pepper; mix well. Add the shrimp and stir to coat evenly. Refrigerate for a few hours.
2. Preheat oven to 300°F.
3. Pour the marinated shrimp into an 11- by 7-inch baking dish and arrange the shrimp in a single layer. Cover with foil and bake for 15 minutes.
4. Remove the foil from the baking dish. Turn each piece of shrimp over, drizzle with butter and sprinkle with bread crumbs and cheese. Bake, uncovered, until golden, 5 to 10 minutes more.
5. Serve with French bread or pasta for sopping up the aromatic juices.

Serves 8 as an appetizer or 4 as an entrée
1⁄4 cup olive oil
1⁄4 cup chopped fresh parsley
3 garlic cloves, minced
1⁄2 teaspoon red pepper flakes
1⁄4 teaspoon ground black pepper
24 large shrimp, peeled and deveined
4 tablespoons unsalted butter, melted
1⁄4 cup homemade toasted French bread crumbs
1⁄2 cup grated Parmesan cheese
Grilled or toasted
French bread and/or pasta, for serving
