Soy and Mirin Glazed Salmon

Preparation
1. Mix the mirin, sugar and soy in a shallow dish. Place the salmon pieces in the dish and marinate for 3 minutes on the first side, 2 minutes on the second side.
2. Heat a large skillet over medium-high heat. Place the salmon in the skillet and cook in the dry pan for 2 minutes. Turn the salmon pieces over, add the marinade and cook for 2 minutes more.
3. Transfer the salmon to a serving platter.
4. Stir the vinegar into the hot skillet. Pour the glaze over the salmon. Top with the green onions and place the sushi ginger on the side. Serve with rice or noodles and vegetables.
Ingredients
Serves 4
1⁄4 cup mirin (Japanese sweet rice wine)
1⁄4 cup packed light brown sugar
1⁄4 cup soy sauce
6 (4-ounce) center-cut pieces wild-caught salmon, each about 6 by 2 1⁄2 inches
2 tablespoons rice vinegar
2 green onions, cut into thin strips
Pickled sushi ginger
Steamed rice or noodles, plus vegetables, for serving
