“A delicious, quick and easy dessert and a potluck favorite! It’s a nice counterpoint to the usual brownie. This recipe has been in our family since the early 80s and is always a hit.” — Andrew and Jean Smith
Preparation
1. Preheat oven to 350°F. Grease a 9- by 13-inch baking pan.
2. In a large bowl, beat the eggs. Stir in the granulated sugar, vanilla, lemon extract and melted butter and mix well.
3. In a medium bowl, stir together the flour, baking powder and ginger. Add the flour mixture to the sugar mixture and stir until blended. Stir in 3⁄4 cup of the nuts. Spread the batter in the prepared pan and sprinkle the remaining 1⁄4 cup nuts on top.
4. Bake until golden brown, about 25 minutes.
5. Let cool in the pan, then cut into 1- by 2-inch bars and dust with confectioners’ sugar. Store in airtight container.

2 large eggs
1 cup granulated sugar
1⁄2 teaspoon vanilla extract 1⁄2 teaspoon lemon extract
1⁄2 cup (8 tablespoons) unsalted butter or margarine, melted
1 1⁄4 cups all-purpose flour 1⁄4 teaspoon baking powder 1⁄4 teaspoon ground ginger
1 cup macadamia nuts, almonds or other nuts, coarsely chopped
About 1 cup confectioners’ sugar, sifted
