Cookies

“It’s a family favorite and always made for our family gatherings. Whenever these cookies are around so is my family, and that’s what makes them extra special. My husband and son love them just baked out of the oven. My son also enjoys them warm, topped with vanilla ice cream, chocolate sauce, whipped cream and sprinkles for the ultimate sundae!” — Darlene Kenney
Preparation
1. Preheat oven to 350°F.
2. In a large bowl, stir together the flour, baking soda and instant pudding until well blended. Add the melted butter, granulated sugar, brown sugar, eggs and vanilla. Using a handheld mixer fitted with the beater attachment, beat until combined.
3. Transfer the dough to a work surface. Fold and knead the dough with your hands until all the ingredients are well combined. Add the chocolate chunks and mix in with your hands.
4. Scoop the dough onto a nonstick baking sheet, using a heaping tablespoon for each cookie. Bake for 13 to 15 minutes.
5. Let cool on the baking sheet for a few minutes, then transfer the cookies to a wire rack to cool completely.
Makes about 18 cookies
2 1⁄4 cups all-purpose flour
1 rounded teaspoon baking soda
1 box vanilla instant pudding (Jell-O or Royal brand)
1 cup (16 tablespoons) salted butter, melted (should be softened with some liquid)
1⁄2 cup granulated sugar
3⁄4 cup packed light brown sugar
2 large eggs 1 teaspoon vanilla extract
3⁄4 to 1 (11.5-ounce) bag Nestle’s chocolate chunks
