Preparation
1. Prepare a grill for direct-heat cooking over medium-high heat.
2. Brush each salmon fillet lightly with olive oil. Season with salt and pepper.
3. Grill the salmon just until opaque throughout.
4. To assemble the sandwiches, brush
the cut sides of the rolls with basil-garlic mayonnaise. Place 1⁄2 cup arugula on the bottom of each roll, followed by 1⁄4 cup bell pepper strips and a salmon fillet.
Cover with the top halves of the rolls.
Serves 10
10 (4 to 6-ounce) Alaska salmon fillets
