Black Bean Pizza

Preparation
1. Preheat oven to 425°F. Lightly grease a 12- by 16-inch pan.
2. Unroll the pizza crust and spread it even- ly on the prepared pan. Bake until golden, 7 to 10 minutes.
3. In a food processor, combine the black beans, oil, cilantro, cumin, hot pepper sauce and garlic and process until smooth. Spread the black bean mixture over the pizza crust. Top with the bell pepper, olives and green onions. Sprinkle with the cheese.
4. Bake until the cheese is melted, 7 to 12 minutes. Cut the pizza into slices and serve.
Ingredients
Serves 2 to 3
10 ounces refrigerated pizza crust, such as Pillsbury
1 (15-ounce) can black beans, drained and rinsed
3 tablespoons olive oil
2 tablespoons chopped fresh cilantro
1 teaspoon ground cumin
1 teaspoon hot pepper sauce
1⁄2 teaspoon minced garlic
1 red bell pepper, seeded and diced
1 (6-ounce) can pitted black olives, sliced
2 green onions, sliced
1 cup (or less) shredded cheese, such as Monterey Jack
