It is a traditional dish of Sichuan cuisine in China. It reminds me about my home and my family.
INGREDIENTS
10 oz. flank steak, sliced 1⁄4-inch thick against the grain 1⁄4 tsp. baking soda
1⁄4 cup water
2 tsp. cornstarch
1 tbsp. + 1⁄4 cup + 3 tbsp. peanut or canola oil (used separately) 6 oz. soybean sprouts
7 oz. package Enoki mushrooms, trimmed, washed, and drained 3 slices ginger
3 scallions, white parts only, cut into 1⁄2-inch pieces 1 tbsp. Sichuan peppercorns
3 tbsp. spicy bean sauce/paste
1 1⁄2 cups low-sodium chicken stock
1 1⁄2 tsp. sugar
1 tbsp. minced garlic
1⁄2 tsp. chili flakes
1 tbsp. chopped cilantro
1⁄2 tsp. ground Sichuan peppercorns
