This is traditional German cooking and Sophia’s great-grandmother cooked this dish. She passed this recipe to Sophia’s grandmother who passed it to Sophia’s mother who passed it to Sophia. We just had a family reunion and everyone makes this dish at home. When we served it, it was gone in a flash.
INGREDIENTS
8-10 Spareribs
2 large cans sauerkraut 1 tbsp. brown sugar
1 lb. wide egg noodles Oil
1 tsp. of salt
4 tsp. of pepper
1-2 sticks of butter
INSTRUCTIONS
1. Add oil to a skillet/pan set over medium heat. When oil is heated, place spare ribs in pan and brown both sides for a few minutes.
2. Put the spareribs and sauerkraut and a tablespoon of brown sugar in a pressure cooker. Cook about 25 minutes.
3. Add water to a large pot and set over medium heat until water boils. Add wide noodles and cook until al dente. Drain noodles well.
4. Melt butter in a frying pan and add just enough noodles to cover the bottom of the pan. Add salt and pepper and cook the noodles until they are brown and crisp. Fry all the noodles like this.
5. Put the noodles on a plate, add the spareribs and sauerkraut on top and serve.
