CHUBBY’S RE-BO-SA-DA
INGREDIENTS
2 lbs. cubed steak beef 2 green peppers, cut up 3 onions, cut up
2 cloves garlic, mashed 1 tbsp. vinegar
1⁄4 cup olive oil
3 eggs, scrambled
1 Wash and season beef with your favorite dry rub.
2 In a bowl, mix beef, peppers, onions and garlic. Drizzle with vinegar
and oil, then mix everything together. Refrigerate for at least 4 hours.
3 Heat 2 quarts of water in a large pot. Add beef mixture to the pot and cook over medium heat for 1 hour.
4 On a flat pan, add a little oil and ladle half the scrambled eggs. Once it’s bubbling, add the steak mixture. Once the egg is ready, add the remaining egg on top and flip it to the other side for a complete covering of the steak. Serve over mashed potatoes or with a side of steak frites.
