BLINTZ SOUFFLÉ

INGREDIENTS
Serves 4
1 package frozen fruit or cheese blintzes 3 large eggs 3 ounces sour cream 2 tablespoons buter, melted 4 teaspoons orange juice 1/2 teaspoon vanilla 4 teaspoons granulated sugar

PREPARATION
1. Preheat oven to 375°F. Oil a 9- by 13-inch baking dish.
2. Put the blintzes in the baking dish.
3. In a blender, puree the eggs, sour cream, buter, orange juice, vanilla and sugar unil creamy. Pour over the blintzes.
4. Bake unil pufed and brown, 35 to 45 minutes.
