BRUCE’S
BLUEBERRY
MUFFINS
BREEF-PILZ FAMILY, MANSFIELD, MA
INGREDIENTS
Makes 12 muins
3/4 cup bran
3/4 cup whole-wheat lour
1/2 cup brown sugar
1/2 cup wheat germ
1 teaspoon baking soda
1/2 teaspoon salt
1 cup dried blueberries, coarsely chopped (or a mix of dried blueberries and cranberries)
1/2 cup raisins 1 teaspoon orange zest 2/3 cup butermilk or plain yogurt 1/4 teaspoon vegetable oil 1 large egg, slightly beaten

PREPARATION
1. Preheat oven to 400°F. Buter a 12-cup muin pan. Have a cooling rack ready.
2. In a bowl, whisk together the bran, lour, brown sugar, wheat germ, baking soda and salt. Sir in the blueberries, raisins and orange zest.
3. Gently sir in the butermilk, oil and egg and mix unil well combined. Fill the prepared pan with the bater.
4. Bake for 20 minutes. Cool on a cooling rack. Ater several minutes, run a knife around the edge of each muin and remove from the pan. Cool completely on the cooling rack.
