MINT BROWNIES
WIESMAN FAMILY, NEEDHAM, MA
INGREDIENTS
Makes approximately 24 brownies
1 package brownie mix 2 cups confectioners’ sugar 6 tablespoons margarine 2 tablespoons heavy cream 2 teaspoons peppermint extract Green food coloring as needed 3 ounces semisweet chocolate
“We have been enjoying these brownies since my grandmother first made them, which was more than four decades ago. We love them and sometimes change the color of the frosting for different holidays. We always keep a supply in the freezer for unexpected guests or when we want a little treat.” Laura Wiesman
PREPARATION
1. Bake a brownie mix in a 9- by 13- inch baking pan according to the directions on the package. Cool completely.
2. In a bowl, mix together the con- fectioners’ sugar, 4 tablespoons margarine, heavy cream, pepper- mint extract and enough green food coloring to reach the color you desire. Spread the frosting across the brownies.
3. In a heatproof glass bowl, melt
the chocolate in the microwave on half power. Mix in the remaining 2 tablespoons margarine. Spread over the frosting. Once set, cut into small bars.
