PREPARATION
1. Preheat oven to 400°F.
Oil a rimmed baking sheet.
2. Slice the zucchini into thin rounds and place on the prepared baking sheet. Drizzle olive oil over the top. Season with salt and pepper. Sprin- kle the nuts, cheese and dill on top.

1 1/2 pounds zucchini and/or summer squash (3 large or 6 medium)
Olive oil Salt Ground black pepper Handful of lightly toasted walnuts
3. Bake for 20 minutes or until the edges of the zucchini have caramel- ized and the nuts are well toasted.
