GRILLED
LEMON CHICKEN

PREPARATION
1. Zest 3 of the lemons with a grater or a Microplane rasp. Juice all of the lemons. In a bowl, whisk together the lemon juice and zest, oil, pars- ley, garlic powder, onion powder, pepper, salt, thyme and basil.
2. Put the chicken in a large resealable plasic bag. Pour the marinade over the chicken and seal the bag, ensur- ing that the marinade coats all of the pieces. Refrigerate for at least 1/2 hour or up to 12 hours.
3. Prepare a grill for direct-heat cook- ing. Grill the chicken over high heat, spooning some of the marinade over the top as the chicken cooks, unil cooked through, about 3 minutes each side or unil the meat is irm.

8 lemons 1/2 cup olive oil 3 tablespoons dried parsley 1 tablespoon garlic powder 1 tablespoon onion powder 2 teaspoons cracked black pepper 1 teaspoon salt 1 teaspoon dried thyme 1 teaspoon dried basil 2 pounds boneless chicken
(breasts or thighs)
