HERBED CHICKEN

INGREDIENTS
Serves 6
2 tablespoons butter 2 tablespoons vegetable oil 1/4 cup chopped onion 1/4 cup lemon juice 2 tablespoons Worcestershire sauce 1/2 teaspoon dried basil leaves 1/4 teaspoon dried marjoram leaves 1/4 teaspoon dried oregano leaves 2 garlic cloves 1 (3- to 3 1/2-pound) whole chicken,
cut into pieces
ttfttfttttPREPARATION 1. Preheat oven to 375°F. Place the butter and oil in a 9- by 13-inch bak- ing dish and put in the oven until the butter melts, 5 to 10 minutes.
2. Stir the onion, lemon juice, Worces- tershire, and dried herbs into the melted butter and oil. Put the chicken in the pan and carefully turn the pieces to coat with the herb mixture.
3. Arrange the pieces skin-side up. Bake, uncovered, for 30 minutes. Turn the pieces and bake until cooked through, about 30 minutes more.
