TURKEY BURGERS WITH MAPLE CARAMELIZED
ONIONS

INGREDIENTS
Serves 4
Onions: Vegetable oil 2 large Vidalia onions, thinly sliced 3 tablespoons maple syrup, or to taste 1/4 teaspoon cayenne Salt Ground black pepper
Burgers: 1 1/2 pounds ground turkey 1 tablespoon whole-grain mustard 1 garlic clove, minced 1 large egg 2 tablespoons minced fresh parsley or
dried parsley leaves
1/2 teaspoon salt, plus more for seasoning
1/4 teaspoon ground black pepper, plus more for seasoning
1/4 cup panko breadcrumbs Olive oil 4 sesame seed buns

PREPARATION
1. Heat a thin ilm of oil in a large skillet over low heat.
2. Sweat the onions on low heat unil they begin to soten, 10 minutes. Coninue to cook unil they cara- melize, 10 to 15 more minutes. Mix in the maple syrup and cayenne. Season with salt and pepper.
3. Heat a grill for direct-heat cooking. In a bowl, mix together all of the burger ingredients (except the olive oil and buns) with your hands. Form the meat into 4 (6-ounce) burgers. Brush each side with olive oil and season with salt and pepper.
4. Grill the burgers, turning over half- way through, unil cooked through, approximately 10 minutes. Mean- while, toast the buns. Serve the burgers on the buns and top with onions.
