TURKEY
SLOPPY JOES

INGREDIENTS
Serves 4
2 tablespoons olive oil 1 onion, diced 1/2 red bell pepper diced 1 1/4 pounds ground turkey (or 1
pound ground beef) 1/2 cup ketchup
1/2 cup tomato sauce (preferably homemade)
1/4 cup water 1 teaspoon Worcestershire sauce 1 tablespoon brown sugar 1 teaspoon celery salt,
or less if preferred 1/2 teaspoon dried oregano Ground black pepper Hamburger buns, rice or butered egg
noodles for serving

PREPARATION
1. Heat the oil in a large skillet over medium-high heat. Add the onions and bell pepper and cook, sir-
ring oten, for 2 minutes. Add the ground turkey and cook, using a wooden spoon to break up the meat into small pieces, unil lightly browned.
2. Pour in the ketchup, tomato sauce and water and sir to combine. Sir in the sugar, celery salt and orega- no. Season with black pepper. Sim- mer gently over low heat unil the sauce has thickened, 15 minutes. Serve over buns, rice or noodles.
