LAYERED FIESTA
CASSEROLE

INGREDIENTS
Serves 6
Vegetable oil 1 pound ground beef
1 green bell pepper, stemmed, seeded and chopped
1 red bell pepper, stemmed, seeded and chopped
1 (16-ounce) jar thick and chunky salsa
1 (14.5-ounce) can diced tomatoes, with juices
1 (10-ounce) package frozen corn, thawed
12 (6-inch) flour tortillas
1 1/2 cups shredded sharp cheddar cheese

fttftftttPREPARATION 1. Preheat oven to 375°F. Have a 9- by 13-inch baking dish ready.
2. Heat a thin film of oil in a large skillet over medium-high heat. Brown the meat and peppers, stirring frequently and breaking the meat up with a wooden spoon as it cooks, until cooked through. Drain off the excess fat and juices. Stir in the salsa, tomatoes and corn; bring to a boil.
3. Spoon 1 cup of the meat mixture into the baking dish. Top with 6 tortillas, overlapping as necessary. Spoon half of the remaining meat mixture over the tortillas. Top
with 3/4 cup cheese. Top with the remaining 6 tortillas and meat mix- ture. Cover with aluminum foil.
4. Bake for 25 to 30 minutes or until heated through. Uncover. Sprinkle with the remaining 3/4 cup cheese and let stand 5 minutes or until the cheese is melted.
