MINUTE(MAN)
MEATLOAF
YANNONI FAMILY, STOW, MA
INGREDIENTS
Serves 4
1 1/2 pounds ground beef or turkey (or a mix of both)
1 small onion, chopped 1 large egg 1/2 cup breadcrumbs 1 1/2 teaspoons salt 1/4 teaspoon ground black pepper 16 ounces tomato sauce 1/2 cup water 2 tablespoons mustard 3 tablespoons brown sugar 2 teaspoons Worcestershire sauce Baked or mashed potatoes, for serving
“This recipe is based on a recipe found
on the side of a can of Hunt’s Tomatoes many decades ago (circa 1940) by my grandmother. It has been a favorite of each generation ever since. Leftovers (if there are any!) are also delicious served in sandwiches.” Sandi Yannoni
PREPARATION
1. Preheat oven to 350°F. Oil a 9- by 13-inch baking dish.
2. In a large bowl, combine the ground meat, onion, egg, breadcrumbs, salt, pepper and 6 ounces of sauce. Form the meat into a loaf shape and place in the prepared baking dish.
3. In a bowl, add the remaining 10 ounces tomato sauce, water, mus- tard, brown sugar and Worcester- shire sauce and stir to combine.
4. Pour the sauce over the meatloaf and bake for 1 hour or until the internal temperature of the loaf reaches 160°F. Serve with potatoes.
