Bobotie (Traditional South African Dish)

“It’s a traditional South African recipe which is where our family is originally from. Bobotie is usually served with rice, coconut, bananas and chutney on the side.”

INGREDIENTS Serves 4 to 6
2 thick slices white bread
1 1⁄2 cups water
1 tablespoon vegetable oil
2 yellow onions, chopped
3 unpeeled apples, grated
1⁄4 cup apricot jelly or apricot chutney
2 tablespoons distilled white vinegar
1⁄4 cup ketchup
1⁄4 cup granulated sugar
2 teaspoons curry powder (less if you don’t want it too strong)
1 teaspoon ground coriander
1 teaspoon ground ginger
1 teaspoon ground turmeric
1 teaspoon ground cinnamon
1 teaspoon mixed dried herbs About 3 1⁄3 pounds ground beef 3 large eggs
8 bay leaves
