Grilled Mini Meat Loaves

INGREDIENTS Serves 4
2 slices sandwich bread, torn into small pieces
4 green onions, thinly sliced
1⁄2 cup lightly packed fresh basil leaves
3 tablespoons olive oil, plus additional for rubbing
1 pound ground beef
2 tablespoons grated Parmesan cheese
1 teaspoon salt
1⁄2 teaspoon ground black pepper
4 (1 1⁄2-inch) cubes fresh moz- zarella

Prepare a grill for direct-heat cooking over medium-high heat.
In a food processor, com- bine the bread, green on- ions, basil and 1 tablespoon of the olive oil. Pulse until coarsely chopped. Transfer the mixture to a large bowl and add the beef, Parmesan cheese, salt, pepper and the remaining 2 tablespoons olive oil. Mix lightly until
just combined.
Form the mixture into 4 thick, 5-inch loaves. Make an indentation in the cen- ter of each loaf and tuck a piece of mozzarella inside. Cover the mozzarella with meat to enclose it. Rub the loaves with additional olive oil.

4. Grill the loaves, turning occasionally, until well browned all over, about 8 minutes.
