Family-Friendly Cajun Paella

“This is a filling and satisfying meal giving real meaning to the term comfort food. The spiciness and slight heat in this dish makes it a family favorite. The one-pot prep and easy reheat option makes it a cook’s delight when feeding a hungry crowd. Add more or less Cajun spice according to your taste. We prefer to spice it up, then cool it down with a heap of melted cheese on top. Yum!” Liz Morin
INGREDIENTS Serves 8
Cajun Seasoning:
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1 teaspoon ground white pep- per
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon red pepper flakes
1 teaspoon cayenne pepper
1⁄2 teaspoon salt
1⁄2 teaspoon coarsely ground black pepper
1⁄2 teaspoon dried oregano 1⁄2 teaspoon dried thyme
Paella:
2 tablespoons vegetable oil
1 pound boneless skinless chicken breasts, cubed
1 pound hot chourico sausage, sliced
1 yellow onion, chopped 1 stalk celery, chopped
2 cloves garlic, chopped 2 carrots, chopped
1⁄2 green bell pepper, seeded and chopped
1⁄2 yellow bell pepper, seeded and chopped
1⁄2 red bell pepper, seeded and chopped
1 (8-ounce) container white button mushrooms, sliced
1 (14 1⁄2-ounce) can diced tomatoes
1 cup medium-grain rice 2 1⁄2 cups chicken broth
1 (8-ounce) package shredded cheddar jack cheese
