5. Cover the pot, leaving the lid slightly ajar and bring to a boil. Lower heat to low and simmer 3 to 4 hours, stirring regularly.
6. Remove from heat, discard bay leaves and serve as desired. Transfer any unused sauce into clean jars and refrigerate until needed.
