INGREDIENTS Serves 20
2 1⁄4 cups unsalted butter
3 cups finely ground chocolate wafer cookies, such as Oreos (cookies only, no filling)
5 cups chocolate chips 8 large eggs

PREPARATION
1. Preheat oven to 350°F. Grease a 15- by 10-inch jelly roll pan with shortening.
2. Melt 4 tablespoons of the butter in a large saucepan over medium heat. Pour into a large bowl and stir in the cookie crumbs until evenly moistened. Pat the mixture firmly and evenly into the prepared pan.
3. Melt the remaining 2 cups butter in the same sauce- pan over medium heat. Add the chocolate chips and stir frequently until melted and smooth. Remove from heat; let cool 10 minutes.
4. Whisk in the eggs until well mixed. Pour mixture on top of cookie crust and bake until just set, 20 to 25 min- utes.
5. Place pan on a wire rack and let cool 1 hour. Refrig- erate until completely set, at least 2 hours, but preferably overnight.
