Crab Quesadillas with Tomatillo and Avocado Salsa

INGREDIENTS Serves 8
Tomatillo avocado salsa:
2 tablespoons vegetable oil
1 large yellow onion, diced
3 cloves garlic
1 pound tomatillos, husks re- moved, quartered
2 jalapeño peppers, sliced (seeds removed, if desired)
2 teaspoons ground cumin
1 teaspoon ground coriander
1 cup water
2 ripe Hass avocados, peeled, pitted and diced
1⁄2 bunch fresh cilantro Juice of 1 lime
Salt
Crab quesadillas:
2 poblano chiles
4 cups grated asadero or Mon- terey Jack cheese
1 teaspoon salt
1 teaspoon cumin
8 ounces fresh king crab or surimi, finely diced
1⁄2 bunch fresh cilantro, chopped
16 corn tortillas
4 tomatillos, husks removed, sliced
Vegetable oil
