Grapefruit and
Pistachio-Crusted Salmon
Wonderful Pistachios & Almonds
INGREDIENTS Serves 4
4 salmon fillets, each about 6 ounces
Salt
Ground black pepper
2 teaspoons olive oil
2 teaspoons honey
1⁄4 cup grapefruit juice 1⁄2 cup shelled pistachios 1⁄4 teaspoon paprika
PREPARATION
1. Preheat oven to 425°F. Line a baking sheet with foil.
2. Place the salmon on the prepared baking sheet and season with salt and pepper.
3. Add the olive oil, honey, grapefruit juice, pistachios and paprika to a food processor and pulse until a chunky paste forms. Spread the mixture evenly over the fillets. Bake until the thickest portion of the fish is barely opaque, 12 to 15 minutes.
