Noodle Kugel

“Early on, we started our family tradition of upside-down breakfast because our family loves breakfast. So now and then, we would opt for an elaborate breakfast during the week and serve it with a salad. For some reason, this upside-down breakfast always felt like a party! The egg noodle kugel served with a green salad makes for a hearty, tasty meal.”

INGREDIENTS Serves 6
Kugel:
1 (1-pound) package wide egg noodles
3 tablespoons margarine
3 large eggs
2 cups cottage cheese
3⁄4 cup yogurt or sour cream
8 ounces cream cheese or labneh
2 teaspoons ground cinnamon 1 teaspoon ground nutmeg
1 teaspoon vanilla extract
1⁄4 cup granulated sugar
1⁄2 teaspoon salt
1⁄2 cup raisins
1 tablespoon lemon juice
2 ripe peaches or apples, peeled, pitted or cored and sliced
Topping:
1 cup fresh bread crumbs or panko
2 teaspoons ground cinnamon
1⁄4 cup packed light brown sugar
