 Chocolate Chip Banana Bread

“This recipe is my go-to, feel good, welcome neighbor, happy birthday—you name it! We love it with cream cheese or just warmed slightly as is. It freezes very well and everyone seems to love it!” Kristen Brechter
INGREDIENTS Makes 1 loaf
1 large egg, lightly beaten 1 cup granulated sugar
4 tablespoons unsalted butter, melted
3 or 4 very ripe bananas
1 1⁄2 cups all-purpose flour 1 teaspoon baking soda
1⁄2 teaspoon salt
3⁄4 cup semisweet chocolate chips
PREPARATION
1. Preheat oven to 375°F. Grease and flour a loaf pan.
2. In a large bowl, stir together the egg, sugar and butter.
3. In a separate bowl, mash the bananas until there are no large chunks. Add the bananas to the egg mixture and stir until well combined. Add the flour, baking soda and salt and stir until com- bined. Stir in the chocolate chips. Pour the batter into the prepared pan.
4. Bake until the center of the loaf is set when touched with your finger, about 1 hour.
5. Transfer the pan to a wire rack and let cool for 15 minutes, then turn the loaf out onto the rack and let cool for at least 30 minutes before slicing.
