Oatmeal Squares

“This is a quick and easy recipe. The ingredients are basic and usu- ally always available, but it’s a delicious bar cookie. Great to pack up and send off to your student!”

INGREDIENTS Makes 24 bars
1 cup (16 tablespoons) unsalted butter, softened
1⁄2 cup packed light brown sugar
1⁄2 cup granulated sugar 1 large egg
1 teaspoon vanilla extract 1 cup all-purpose flour
1 cup old-fashioned rolled oats 6 ounces (1 cup) chocolate bits
PREPARATION
1. Preheat oven to 350°F. Grease a 9- by 13-inch baking pan.
2. In the bowl of a stand mixer fitted with the flat beater attachment, beat togeth-
er the butter, brown sugar and granulated sugar on medium speed until light and fluffy. Add the egg and vanilla and beat until well blended. Add the flour and oats and beat on low speed until combined. Press the batter into the prepared pan.
3. Bake until the edges begin to brown, about 20 minutes. Remove the pan from the oven and sprinkle the choc- olate bits over the top.
4. Transfer the pan to a wire rack and let stand until the chocolate is softened, about 15 minutes. Spread the chocolate over the top, then let cool completely in the pan. Cut into 24 squares.
